Chicken Pad Thai

Heat 3 Tbs. olive oil in skillet.
Sauté 2 diced chicken breasts (and/or shrimp) with a large diced onion until cooked thru. Remove from skillet.
Scramble 2-3 eggs and cook until done and crumbled. Remove from skillet.
Boil 5-8 cups of water. Turn off burner and add 1 pkg. rice noodles. Let them sit in the hot water for 3-5 minutes before draining.
Heat 3-5 Tbs. olive oil in skillet again and add noodles. Stir fry until slightly browned.
Add at least one 16 oz. can of bean sprouts. Add everything else and continue stir frying.
Add Pad Thai sauce and heat thru.
Top with fresh cilantro, chopped peanuts, and a squeeze of fresh lime juice. (Green onions are good too.) Sprinkle with cayenne pepper to add zing.
