Cashew Chicken
Recipe Submitted by the First Farm Inn

Start 2 c. brown rice cooking according to package directions.
• Mince 2 garlic cloves
• Thinly slice 1/2 c. carrots
• Thinly slice 1/2 c. celery
• Chop 3 c. broccoli
• Wash 1 c. fresh snow peas
In a large skillet, stir fry 1 lbs. boneless skinless chicken breast diced or cut into strips. Add garlic, celery and carrots, stir fry 3-5 min.
In Pyrex mixing bowl combine
• 2 c. chicken broth,
• ½ tsp. ground ginger, (or fresh chopped)
• ¼ c. cornstarch,
• 3-5 Tbs. soy sauce.
Whisk together and microwave for 2 minutes.
Add broccoli and snow peas to skillet, then sauce mixture. Stir, cook and cover until broccoli is bright green and crisp tender.
Serve over rice, top with cashews.
